LOT 01 - SCOTT'S GULF COAST BEEF - ONE-HALF WHOLE BEEF PROCESSING

DESCRIPTION: Babe Scott Family- When putting this sale together, I knew the connection Maci had with Gracie, so when I told Babe my idea, he was all in and said whatever we needed he would donate.  He decided to contribute a whole beef plus the processing cost.  We will be selling a ONE (1) one-half whole beef processing here and we will have TWO (2) lots that sell as Lot 02 and Lot 03 that are one-quarter whole beef processing. PLEASE NOTE  -  STEER WILL BE HARVESTED IN MARCH.

Remember this is all relative to the carcass weight which will vary from one animal to the next. This is just an average.

Following the trimming, deboning, and 21-day aging, your finished product would roughly be 480 lbs of beef for a whole. 240 lbs if you purchased a1/2 beef. 120 lbs if you purchased a1/4 beef.

1/2 Side of Beef- We deliver to the processor.  You will call the processor and give them your cutting instructions. For optimum taste and tenderness, the beef is hung to dry age for 21 days. It is then processed per your cutting instructions. And once the processor calls you for pick-up it is your responsibility to pick up your beef or make arrangements with us to pick up for you to pick up at the ranch on the agreed upon date and time.

When ordering a quarter side of beef, you will get a pre-determined cut sheet which will include a variety of cuts. You will receive a mix of steaks, roasts, ground beef, brisket, ribs, and fajitas
